Ingredients
- 1 head of broccoli, chopped into florets
- 2 medium carrots, peeled and chopped
- 1 medium onion, chopped
- 4 cups of chicken broth
- 2 cups of whole milk
- 4 cups of grated sharp cheddar cheese
- Salt and pepper to taste
- 2 tablespoons of butter

- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add 1 medium chopped onion and cook until soft and translucent, about 5 minutes.
- Add 2 peeled and chopped carrots and cook until softened, about 5 minutes.
- Add 1 head of chopped broccoli and 4 cups of chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for 10 minutes, or until the vegetables are tender.
- Reduce heat to low and add 2 cups of whole milk. Stir until combined.
- Stir in 4 cups of grated sharp cheddar cheese until melted. Season with salt and pepper to taste.
