Ingredients

  • 1 head of broccoli, chopped into florets
  • 2 medium carrots, peeled and chopped
  • 1 medium onion, chopped
  • 4 cups of chicken broth
  • 2 cups of whole milk
  • 4 cups of grated sharp cheddar cheese
  • Salt and pepper to taste
  • 2 tablespoons of butter

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat.
  2. Add 1 medium chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add 2 peeled and chopped carrots and cook until softened, about 5 minutes.
  4. Add 1 head of chopped broccoli and 4 cups of chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for 10 minutes, or until the vegetables are tender.
  5. Reduce heat to low and add 2 cups of whole milk. Stir until combined.
  6. Stir in 4 cups of grated sharp cheddar cheese until melted. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
