Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 pound carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, and grated ginger and cook until softened and fragrant, about 5 minutes.
  2. Add 1 pound of peeled and chopped carrots and 4 cups of vegetable broth to the pot and bring to a boil.
  3. Reduce the heat and simmer for 20-25 minutes, or until the carrots are tender.
  4. Remove the pot from the heat and use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Stir in 1/2 cup of milk and season with salt and pepper to taste.
  6. Return the pot to the heat and simmer for 5 minutes to allow the flavors to meld together.
  7. Serve and enjoy!
