Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- 1/2 cup milk
- Salt and pepper to taste

- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, and grated ginger and cook until softened and fragrant, about 5 minutes.
- Add 1 pound of peeled and chopped carrots and 4 cups of vegetable broth to the pot and bring to a boil.
- Reduce the heat and simmer for 20-25 minutes, or until the carrots are tender.
- Remove the pot from the heat and use an immersion blender or transfer the soup to a blender to puree until smooth.
- Stir in 1/2 cup of milk and season with salt and pepper to taste.
- Return the pot to the heat and simmer for 5 minutes to allow the flavors to meld together.
- Serve and enjoy!
