Ingredients

  • 4 large bell peppers (any color)
  • 1 lb. ground beef
  • 1 cup cooked rice
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 1/4 cup tomato sauce
  • 1/4 cup water
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.
  3. In a medium skillet, cook the ground beef, onion, celery and green bell pepper over medium-high heat until the meat is browned and the vegetables are tender, stirring occasionally.
  4. Add cooked rice, tomato sauce, water, garlic powder, salt, and black pepper. Mix well.
  5. Fill each bell pepper evenly with the beef and rice mixture.
  6. Sprinkle shredded cheddar cheese over the top of each pepper.
  7. Arrange the peppers snugly in a baking dish and pour 1/2 inch of water into the bottom of the dish.
  8. Cover the dish tightly with aluminum foil.
  9. Bake for 35-40 minutes or until the peppers are tender and the cheese is melted and bubbly.
