Ingredients
- 4 large bell peppers (any color)
- 1 lb. ground beef
- 1 cup cooked rice
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped green bell pepper
- 1/4 cup tomato sauce
- 1/4 cup water
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.
- In a medium skillet, cook the ground beef, onion, celery and green bell pepper over medium-high heat until the meat is browned and the vegetables are tender, stirring occasionally.
- Add cooked rice, tomato sauce, water, garlic powder, salt, and black pepper. Mix well.
- Fill each bell pepper evenly with the beef and rice mixture.
- Sprinkle shredded cheddar cheese over the top of each pepper.
- Arrange the peppers snugly in a baking dish and pour 1/2 inch of water into the bottom of the dish.
- Cover the dish tightly with aluminum foil.
- Bake for 35-40 minutes or until the peppers are tender and the cheese is melted and bubbly.
