Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Optional garnish; chopped fresh basil
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil.
- Season the chicken breasts with salt and pepper on both sides.
- Set up 3 shallow dishes or bowls one with the 1/2 cup all-purpose flour, one with the 2 beaten eggs, and one with the 1 cup seasoned bread crumbs and 1/2 cup grated Parmesan cheese.
- Dredge each chicken breast in the flour, shaking off any excess, then dip it into the beaten eggs, and finally coat it in the bread crumb mixture. Press the mixture onto the chicken to ensure it adheres.
- Heat the 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for 2-3 minutes per side, or until golden brown.
- Transfer the chicken breasts to the prepared baking sheet.
- Pour the 2 cups of marinara sauce over each chicken breast, spreading it out to cover the entire surface. Sprinkle the 1/2 cup of shredded mozzarella cheese over the sauce.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
- Let the chicken rest for a few minutes before serving. Garnish with chopped fresh basil, if desired.
