Ingredients

  • 1 cup cooked and shredded chicken breast
  • 1/2 cup plain Greek yogurt
  • 1/4 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup diced tomato
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: pita bread or lettuce leaves for serving

Instructions

  1. In a small mixing bowl, combine 1/2 cup of plain Greek yogurt with 1 tablespoon of lemon juice, and 1/4 teaspoon of garlic powder. Mix well until smooth and creamy.
  2. To the bowl, add 1 cup of cooked and shredded chicken breast, 1/4 cup of diced cucumber, 1/4 cup of diced red onion, 1/4 cup of diced tomato, and 2 tablespoons of chopped fresh parsley.
  3. Season liberally with salt and pepper, and mix everything together until well combined.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. Serve with toasted pita bread or on a bed of crisp lettuce leaves for a low-carb option. Enjoy!
