Ingredients
- 1 cup cooked and shredded chicken breast
- 1/2 cup plain Greek yogurt
- 1/4 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup diced tomato
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Optional: pita bread or lettuce leaves for serving
Instructions
- In a small mixing bowl, combine 1/2 cup of plain Greek yogurt with 1 tablespoon of lemon juice, and 1/4 teaspoon of garlic powder. Mix well until smooth and creamy.
- To the bowl, add 1 cup of cooked and shredded chicken breast, 1/4 cup of diced cucumber, 1/4 cup of diced red onion, 1/4 cup of diced tomato, and 2 tablespoons of chopped fresh parsley.
- Season liberally with salt and pepper, and mix everything together until well combined.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve with toasted pita bread or on a bed of crisp lettuce leaves for a low-carb option. Enjoy!
