Ingredients

  • 1 pound of elbow macaroni
  • 4 tablespoons of unsalted butter
  • 4 tablespoons of all-purpose flour
  • 4 cups of whole milk
  • 2 cups of grated Beecher's Flagship Cheese
  • 1 teaspoon of mustard powder
  • Salt and pepper to taste

Instructions

  1. Cook 1 pound of elbow macaroni in a large pot of salted boiling water according to package instructions until al dente. Drain in a colander and set aside.
  2. In a saucepan, melt 4 tablespoons of unsalted butter over medium heat.
  3. Add 4 tablespoons of all-purpose flour and whisk until combined. Cook for 2-3 minutes, or until the mixture is golden and fragrant.
  4. Gradually add 4 cups of whole milk, whisking constantly, until the mixture is smooth and thickened, about 5-7 minutes.
  5. Stir in 2 cups of grated Beecher's Flagship Cheese, 1 teaspoon of mustard powder, and salt and pepper to taste. Cook until the cheese is melted and the sauce is smooth, about 2-3 minutes.
  6. Add the cooked macaroni to the cheese sauce and stir until combined.
  7. Serve hot and enjoy!
