Ingredients
- 1 pound fingerling potatoes, washed and dried
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 1/2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt or to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper, aluminum foil or silicone mat.
- Cut any larger fingerling potatoes in half lengthwise, so that all the potatoes are roughly the same size.
- In a large bowl, toss the fingerling potatoes with 2 tablespoons of olive oil, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of onion powder, and salt and pepper to taste, making sure that the potatoes are well coated.
- Arrange the potatoes in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
- Remove from the oven and let cool for a few minutes before serving.
