Ingredients

  • 1 pound fingerling potatoes, washed and dried
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt or to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper, aluminum foil or silicone mat.
  2. Cut any larger fingerling potatoes in half lengthwise, so that all the potatoes are roughly the same size.
  3. In a large bowl, toss the fingerling potatoes with 2 tablespoons of olive oil, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of onion powder, and salt and pepper to taste, making sure that the potatoes are well coated.
  4. Arrange the potatoes in a single layer on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
  6. Remove from the oven and let cool for a few minutes before serving.
  7. Serve and enjoy!
