Ingredients
- 2 lbs boneless, skinless chicken breasts
- 2 tablespoons of taco seasoning
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 8-10 taco shells
- Toppings of your choice (e.g. shredded lettuce, diced tomatoes, shredded cheese, sour cream, etc.)
- 2 tablespoons of olive oil
Instructions
- In a large saucepan, heat 2 tablespoons of olive oil over medium heat.
- Add 2 lbs of boneless, skinless chicken breasts and cook until browned on both sides, about 5 minutes per side.
- Add 1 chopped medium onion, 2 cloves of minced garlic, 2 tablespoons of taco seasoning, and 1 cup of chicken broth to the saucepan. Stir until combined.
- Cover saucepan with a lid and let simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove chicken from saucepan and shred with a fork. To make things easier, you can use a stand mixer with a paddle attachment.
- Serve chicken in taco shells and top with your desired toppings.
