Ingredients

  • 5 cups baby spinach leaves
  • 1 cup sliced fresh strawberries
  • 1/4 cup crumbled goat cheese
  • 1/4 cup sliced almonds, toasted
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the 5 cups of baby spinach leaves, 1 cup of sliced fresh strawberries, 1/4 cup of crumbled goat cheese, and 1/4 cup of sliced almonds that have been toasted.
  2. In a small bowl, whisk together the 2 tablespoons of extra-virgin olive oil, 1 tablespoon of balsamic vinegar, 1 teaspoon of Dijon mustard, 1 teaspoon of honey, and salt and pepper to taste to make the dressing.
  3. Drizzle the dressing over the salad and toss to coat.
  4. Serve and enjoy!
