Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of taco seasoning
  • 2 cups of white rice
  • 4 cups of water
  • 2 tablespoons of olive oil
  • 1 cup of nacho cheese

Instructions

  1. In a large saucepan, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 medium chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add 1 lb of ground beef and cook until browned, about 10 minutes. Drain any excess fat.
  4. Add 2 cloves of minced garlic, 1 chopped red bell pepper, 2 tablespoons of taco seasoning, salt and pepper to taste, and stir until fragrant, about 2 minutes.
  5. Add 2 cups of white rice and 4 cups of water to the saucepan and stir until combined. Bring to a boil, then reduce heat to low and let simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Stir in 1 cup of nacho cheese until melted.
  7. Serve hot and enjoy!
